"I Find You Very Appealing" Banana Bread
When I wake up to cold and snow and general crappiness in the weather all I want to do is curl up on the sofa with a book or a TV marathon. And, of course, super delicious comfort food! What came to mind today was my grandmothers banana bread. Because I was feeling adventurous as well I decided to add my own special touch and incorporate some walnuts as well as cinnamon, vanilla and OJ. It’s going to be a crazy day!
I know that this looks like a lot of ingredients. And, I suppose that there are… But, these are all pretty standard pantry staples except for perhaps the egg replacer. I’m telling you though, get this egg replacer. It’s so great for baking. Really. Try it.
2 1/4 cups bread flour
3/4 cups sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp cinnamon
1/2 cup chopped walnuts
1/4 cup orange juice
6 Tbs butter
3 Tbs vegan half and half or cream
2/3 cup mashed bananas (about 2 medium bananas)
1 egg worth of egg replacer
1 tsp vanilla
In a large mixing bowl combine the flour, salt, cinnamon, baking soda, and baking powder. In a small bowl, cream together the sugar and butter. In another bowl, whisk to combine the egg replacer, orange juice, half and half, and vanilla. And in your fourth bowl mash your bananas.
Ok, hard part: done! Now we just need to incorporate the creamed butter and sugar into the dry ingredients, then work in the mashed banana followed by the wet ingredients. Crush up the walnuts and stir them in.
Move your mixture into a greased bread baking pan and pop into the oven for an hour at 350 degrees.
After an hour, check your bread to be sure it’s cooked all the way through by using a toothpick. If the toothpick comes out clean you can remove the loaf from the oven and set it out to cool.
Slice, spread with loads of butter, and enjoy!
