Words Cannot Express Hummus I Love You
You caught me. You found me out. I confess: I love hummus. But why shouldn’t I???? Hummus is infinitely customizable and full of protein… and OH SO good.
I like my hummus a bit lighter and fluffier than a typical garbanzo bean (chickpea) based hummus so I prefer to use big, fat, butter beans. I’ve also recently fallen in love with sesame oil so I’ve worked that into this recipe as well. And of course, black truffles make me super happy so I’ve tossed some of that into the mixture too.
However you make it, hummus is super quick and easy. It refrigerates for a week or so (not that you’ll have it around that long) and is great with everything from pretzels, to chips, to veggies and pita bread. If you like it; dip it!
Ok, here we go:
Servings: a ton… I’d say four people could eat this twice at lunch time and you might still have some left over.
Time: about 10 minutes
One 15.5 oz can white butter beans; drained and rinsed
8 Tbs (1/2 cup) olive oil
2 Tbs toasted sesame oil
2 Tbs water
1/2 Tbs lemon juice
1 tsp garlic powder
1 tsp onion powder
1/2 tsp black truffle salt (or, if you don’t have it or don’t like it, use plain salt)
Into your mini food processor add the beans, lemon juice, sesame oil, and olive oil. Blend, blend, blend until very well combined.
Next, add in the salt, garlic powder and onion powder. Blend, blend blend. Lastly, add in the water and blend again. Keep blending for a minute or so to the water and oil get completely combined.
Plate, garnish (I used fresh cracked pepper, sliced green onion, and chili oil), and enjoy!
Be sure to make this recipe while gracefully and athletically stepping over and around a very large dog. For best results: make sure the dog is nearly unwilling to leave the kitchen area and, when you finally manage it, is so stealthy—more so than any military operation or child at dinner trying to hide his veggies in a glass of milk—that for the split second you aren’t looking he manages to sneak back in and somehow take up even more room.
