An Avocado a Day...

I’d been in a rut recently with the pasta sauces I’d been making—I boarded the cheese train and rode it for way too long…

So today I decided that I wanted something a bit healthier and also with a very different flavor profile. I’m a huge fan of avocado but it’s not necessarily a pasta sauce in the making. But, combine avocado with white beans, a bit of sesame oil, and seasonings and you have a versatile sauce that works warm or cold, on pasta or over greens. It’s amazing!

And the best part is that it’s super quick and I bet you already have all of the ingredients ;-)

Servings: 4

Ingredients

  • 1/2 can butter beans, rinsed

  • 1/2 avocado, peeled and pitted

  • 1/2 cup water

  • 1 Tbs sesame oil

  • 1 tsp lemon juice

  • 1 tsp salt

  • 1/2 tsp garlic powder

  • 1/4 tsp cumin

  • 1/4 tsp smoked paprika

Directions

Blend all ingredients in a food processor. Serve (hot or cold) over pasta or greens. ENJOY!
