Pasta is pretty much my go to meal. If I’m celebrating, it’s pasta. If I’m sad, it’s pasta. If I just can’t decide what I want to eat—you guessed it—pasta. I heart pasta!
French toast is one of those things that seems difficult to accomplish on a plant-based diet given its dependence upon eggs. But, through a lot of research, I’ve put together a recipe that replicates it to a tee!
The husband and I ate all of this the same day I made it. Next time I will clearly need to make double this amount of pesto so that I have some to use a second day.
Taco night in our house is a pretty regular occurrence. Though it does take a bit longer than a lot of other meals (about 40 minutes) that we could whip up if we were in a hurry, tacos are worth it.
The base of this dish is the potato gnocchi. I made this myself since it's fun to do and I had some soft red potatoes lying around that were about to go bad.
