The Apple Bread of My Eye

So I made my regular banana the other day and royally messed it up. For some reason I had a brain fart and set the oven to 450 degrees and put the bread dough in for an hour. I burned the hell out of the bread.

Since my regular banana bread recipe requires two ripe bananas and I’d actually had three on had I was left with one lonely banana—not enough for a new loaf. Cue the sad face… After thinking for a bit I remembered that I also had one apple that had gone uneaten during the week and I had a lightbulb moment—banana apple bread! Ta Da!

Ingredients

  • 2 1/4 cups bread flour

  • 3/4 cups sugar

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/2 tsp cinnamon

  • 6 Tbs butter

  • 1 medium apple (peeled and cored)

  • 1 medium banana (very ripe)

  • 1 egg worth of flax egg (1 Tbs flaxseed meal + 2.5 Tbs water)

  • 1 tsp vanilla

Directions

Mix up the flax egg and sit aside to rest. In a large mixing bowl combine the flour, salt, cinnamon, baking soda, and baking powder. In a small bowl, cream together the sugar and butter. Using a small food processor, blend together the apple and banana. Add the apple and banana mixture, flax egg, and vanilla to the creamed butter and sugar and combine well.

Now incorporate the wet ingredients into the dry ingredients.

Move your mixture into a greased bread baking pan and pop into the oven for 45 to 50 minutes at 350 degrees.

After 40ish minutes, check your bread to be sure it’s cooked all the way through by using a toothpick. If the toothpick comes out clean you can remove the loaf from the oven and set it out on a cooling rack to cool.

Slice, spread with loads of butter, and enjoy!
