No matter the temperature, no matter the season, I very much like to make soup. Soup is one of those meals that is hearty and filling but also never leaves you feeling so full you’re uncomfortable. Plus, it’s comforting and easy to make to boot!
I know that summer is upon us and cool drinks, light meals, and evenings out with friends are what we normally crave. Warm soup is not usually on that list. But I’m telling you this soup is just as wonderful in the summer as it is in the winter.
If you’ve not noticed from my posts so far, I like soup. I’d been wanting to make a soup with a strong nut flavoring for a while and decided on a potato and macadamia nut base.
Usually when I buy a head of cauliflower I use the entire thing making cauliflower soup. This time, I used but half of it in a Thai-inspired noodle dish so I had a half of a head left over with no specific purpose.
I’ve never had white sweet potatoes before and don’t cook with the more common orange variety much as the husband is not a big fan. But, as it’s soup season, and I was in the mood to try something new, the husband acquiesced and we made the purchase.
Oh Fall, how I love you. Your falling leaves. Your crisp air. Your festivals and craft fairs. And especially your butternut squash.
