I know that summer is upon us and cool drinks, light meals, and evenings out with friends are what we normally crave. Warm soup is not usually on that list. But I’m telling you this soup is just as wonderful in the summer as it is in the winter.
I’m a huge fan of avocado but it’s not necessarily a pasta sauce in the making. But, combine avocado with white beans, a bit of sesame oil, and seasonings and you have a versatile sauce that works warm or cold, on pasta or over greens. It’s amazing!
When the weather gets cold and crappy I always want to cozy up on the weekend, watch a movie, and eat a warm bowl of soup or chili. And, since I’ve made several soups recently, this weekend I thought I’d make chili; a lovely bowl of bean chili that is light but also warm, soothing, and filling.
Taco night in our house is a pretty regular occurrence. Though it does take a bit longer than a lot of other meals (about 40 minutes) that we could whip up if we were in a hurry, tacos are worth it.
