Quick and Fresh Pizza Sauce

When you have a hankering for pizza—and have taken the time to make the dough yourself—you don't want to put canned, store-bought sauce on your masterpiece. Oh no. You want to use the freshest and most wonderfully delicious sauce you can—and that can be done in very little time ;-)

If it's tomato season and you can get Jersey tomatoes: get them! These are going to be the best tomatoes you will ever have... At least in the states.

Ingredients:

  • 500g tomatoes (a bit over a pound)

  • 1 tsp salt

  • 1 Tbs dried basil (or, if you have fresh basil use about 1 loosely packed cup)

  • 1 Tbs dried oregano (or, if you have fresh oregano use about 3 Tbs)

  • 1 Tbs onion powder

  • 3 medium cloves of garlic (or 6 small cloves)

  • 6 oz tomato paste

  • a food processor, we LOVE *this* little cutie

Directions:

Chop the tomatoes into pieces that will fit into your food processor and drop them in. Dump in the other ingredients and blend until smooth. This shouldn't take more than about 40 seconds. It's super quick.

If you've used fresh herbs you can use this sauce immediately. If you've used dried herbs you'll want to let it sit for about 10–15 minutes so that the dried herbs absorb some of the moisture from the tomatoes.
